2 cups dried or frozen cranberries
4 Granny Smith apples
1 tablespoon cinnamon
1 teaspoon nutmeg
8 oz brown sugar
8 oz flour
9 tablespoons butter (plus some to butter baking dish), cut into small pieces
1/4 teaspoon salt
1 quart vanilla ice cream
Simmer cranberries until they start to soften, perhaps 10 minutes, and let cool.
Peel and core apples, cutting them into 3/4-inch pieces. Mix apples,
cranberries, cinnamon and nutmeg. Butter 9 by 9 baking dish and spread mix
evenly across bottom.
Preheat oven to 400 degrees. In a bowl mix brown sugar, flour, butter and salt
until the mixture resembles coarse meal. Sprinkle mixture over apples in baking
dish. Bake until topping is golden and apples start to get tender, about 30
minutes.
Top with ice cream and serve.
Serves 6-8.
