18 fresh or dried figs
18 slices of bacon
4 oz goat cheese
18 walnut halves
Remove stems from figs and cut them in half. Slice strips of bacon in half
lengthwise. Wrap one piece of bacon around each fig. Bacon will be long enough
to go around twice. Place on cooking sheet, cover loosely with a piece of foil
to prevent fat from spraying oven, and bake at 350 for about 20 minutes, until
bacon is crisp. Can also be cooked in a couple large, covered frying pans.
Place figs with bacon on paper towels to drain remaining fat and cool. Please
about a teaspoon or less of goat cheese on each fig. Break walnut halves into a
couple pieces each and place one piece on top of each fig.
Serves 8 as an hors d'oeuvres.
