1 1/2 lbs of scallops, sea bass or red
snapper, cut into half-inch cubes
juice of 12 limes for marinade
2 medium tomatoes, seeded and diced
3/4 cup finely chopped cilantro
2 cups coarsely diced avocado
1 or 2 serrano or jalapeno chiles, finely diced
1 medium red onion, finely diced
12 oz bottled clam juice
salt to taste
lettuce for garnish
Marinade fish in lime juice for 3-4 hours. Drain off two thirds of lime juice.
Add remaining ingredients and refrigerate well before serving.
Serve in glasses or bowls on top of a lettuce leaf as a garnish.
Serves 8 as starter.
