juice of 10 limes
3/4 cup orange marmalade
9 large garlic cloves, minced
1 1/2 cups (two bunches) fresh coriander sprigs (cilantro or Chinese parsley),
chopped fine
4 oz olive oil
3 tablespoons soy sauce
1 teaspoon dried hot red pepper flakes
2 lb. shrimp, uncooked, tails removed
Whisk together lime juice, marmalade, garlic, coriander, oil, soy sauce, red
pepper flakes, and salt and pepper to taste. Add shrimp and marinate, chilled,
tossing occasionally to coat shrimp, 2 hours or more.
Saute shrimp in marinade. Shrimp will cook quickly, so don’t overcook. Serve
with toothpicks as hors d’oeuvres, or as starter.
