marinade:
2 oz fresh lemon juice
2 oz fresh lime juice
3 oz soy sauce
2 oz chopped fresh cilantro
2 oz chopped peeled fresh ginger (don’t use too much)
2 oz minced white onion
2 oz butter
salt and pepper to taste

6 6-ounce mahi mahi steaks


Mix marinade ingredients in bowl, and marinade fish for 2-4 hours. Broil fish to sear, or saute in marinade. Take fish off heat before it’s done, as it will continue to cook. Spoon some marinade over top after plating fish.
