8 garlic cloves, minced
3 onion, chopped
1 cup finely chopped scallion
2 tablespoons dried thyme
2 teaspoons salt
1 tablespoon ground allspice
2 teaspoon grated nutmeg
2 teaspoons cinnamon
1/2 cup minced jalapeño peppers
1 tablespoon black pepper
30 drops of Tabasco
2 oz soy sauce
1/2 cup vegetable oil
6 lb boneless chicken breasts
Mince garlic in food processor. Add the onion, scallion, thyme, salt, allspice,
nutmeg, cinnamon, jalapeño, black pepper, Tabasco, soy sauce and oil.
Cut the chicken into bit-size pieces and marinate in mixture, covered and
chilled, turning them occasionally, for at least 1 hour or preferably overnight.
Bake in oven for 30 minutes or until done.
Serves 12 as an entree or provides 50-60 pieces as an hors d’oeuvres.
