sauce:
1/2 cup coarse-grained mustard
1/4 cup water
1/2 cup heavy cream
1/4 cup olive oil
1 teaspoons sugar
2 oz chopped fresh basil
4 6-oz boneless chicken breasts
2 oz olive oil
In a bowl combine well all sauce ingredients. Sauce may be made 1 day ahead and
kept chilled, covered.
Heat oil and saute chicken breasts. Heat sauce separately. Plate chicken and top
with sauce.
Serves 4 as an entree.
