3 oz raisins
2 1/2 oz pine nuts
2 oz extra-virgin olive oil
2 yellow onions, finely chopped
2 garlic gloves, finely chopped
4 lb spinach leaves
salt and pepper
Put raisins in bowl and add enough boiling water to cover raisins. Let
soak for 10-15 minutes, and drain.
Put pine nuts in small dry pan and heat over medium flame to toast them, about 3
minutes, until they're golden and fragrant, occasionally tossing them so they
don't burn.
Heat olive oil in pan over medium heat. Add the onion and saute until
golden, about 5-8 minutes. Add garlic and saute for another minute.
Remove pan from heat.
Put spinach (damp from rinsing) in large pan over medium-high heat, cover and
cook until spinach is bright green and wilted, about 1-2 minutes. Drain
well, let cool, and coarsely chop.
Add the spinach, raisins and pine nuts to the onion and garlic, season with salt
and pepper, and warm over medium heat until hot enough to serve.
Serves 8.
