1 1/2 sticks butter, cut into small pieces
12 oz water
salt
12 oz flour
6 large eggs
3 oz minced scallion
8 slices of bacon, cooked crisp and crumbled fine
12 oz Stilton, crumbled
Melt the butter with the water and a pinch of salt at a moderate heat. Add the
flour and mix until it starts to become a ball. Remove from heat, and stir in
the eggs one at a time, making sure the eggs don't cook apart from the mix. Stir
in the scallion, bacon and Stilton. Put inch-wide balls of the dough on a
lightly buttered cooking sheet. Bake for 20 minutes or until they start to
brown.
Makes about 75 pieces.
