8 oz heavy cream
6 eggs, yolks and whites separated
pinch of salt
12 oz cup sugar
16 oz mascarpone cheese
2 cups very strong coffee
40 ladyfingers
3 oz unsweetened cocoa powder (or chocolate shavings)
Whip cream with electric mixer. In separate bowl, blend egg whites and salt to
consistency of whipped cream. Mix in 4 oz sugar. In a third bowl, thoroughly
blend egg yolks and remaining sugar, then mix in cheese. Combine all ingredients
in one bowl, stirring just enough to completely mix.
Dip ladyfingers in coffee, a couple seconds on each side. Ladyfingers should
absorb a good amount of coffee without falling apart. Line the bottom of a
baking dish with a densely packed layer of cookies, top with 1/4-inch of cheese
mixture. Soak more cookies to create a second layer. Top with a layer of the
remaining cheese mixture. Cover and chill for several hours.
When ready to serve, cut into pieces and then sprinkle with a generous layer of
cocoa powder.
