Apple Chutney Toasts with Ginger Goat Cheese

2 cups brown sugar

12 oz rice vinegar

1 oz minced ginger

1/4 teaspoon cayenne pepper

6 minced garlic cloves

1/2 tablespoon cinnamon

2 cups raisins

3 pounds green apples

2 cups plum tomatoes

1 oz minced fresh mint

3 baguettes, sliced

virgin olive oil

24 oz goat cheese

Warm sugar and vinegar over a medium heat dissolving the sugar. Add ginger, garlic, pepper and cinnamon. Simmer until mix is reduced to a thick consistency. Peel and core apples, and cutting into 12-15 pieces per apple. Mix raisins and apples, and cook until apples are starting to get soft. Dice and seed tomatoes. Mix tomatoes and mint.

Preheat oven to 450 degrees. Place bread slices onto baking sheet and brush with olive oil. Bake until slightly browned. Spread cheese on toast pieces and then add a spoon of chutney.

Makes about 40 pieces.
