Citrus Scallops with Horseradish

2 oz horseradish

1/2 oz lime juice

1 teaspoon lime zest

8 oz mayonnaise

1/4 teaspoon black pepper

2 lbs sea scallops

vegetable oil

Whisk sauce ingredients together and warm over low heat.

Slice any large scallops. In a heavy pan heat 1" of oil using a high heat. Fry the scallops, until close to done ,as they will keep cooking, about three minutes. Scallops will cause a mess so consider using a pan with a cover.

Move the scallops into the pan with the sauce to coat them.
