Tomato Basil Goat Cheese Toasts

24 3/8" baguette slices

3 oz olive oil

3 seeded tomatoes, diced

4 oz chopped sun-dried tomatoes

2 tablespoons chopped fresh basil leaves

2 teaspoon Sherry vinegar

1 oz chopped olives

10 oz goat cheese

Heat oven to 350 degrees. Brush both sides of bread slices with oil and put them on a baking sheet. Toast until golden brown, perhaps five to seven minutes.

Soak dried tomatoes in water to soften before dicing. Mix fresh and dried tomatoes, vinegar, basil, and 1/2 oz oil (delete oil if sun-dried tomatoes come in oil). Spread on olives, and then goat cheese tomato mixture.

Bake until goat cheese softens.
