Garlic Spinach w Onion, Raisins and Pine Nuts

3 oz raisins

2 oz pine nuts

2 oz virgin olive oil

2 diced yellow onions

2 minced garlic gloves

4 lb spinach leaves

salt and pepper

Soak the raisins in a bowl of water for 15-20 minutes then drain.

Place pine nuts in an unoiled pan on a lowish heat to toast them. Keep moving the pan so nuts don't burn. Toast until pine nuts start to turn golden.

Heat olive oil and add onion and garlic. Saute until onion begins to brown.

Put the spinach in a large covered pot of boiling water over medium-high heat and cook until it begins to soften, perhaps a few minutes. Drain and chop spinach.

Mix all ingredients over a medium heat to warm and serve.

Serves 8 as a side dish.
